Borovitza

  • Sensum 2006, Cabernet Sauvignon & Merlot, Danube Plain, 13% abv.
  • Ognyan Tzvetanov Premier Cuvée n.v., Danube Plain, 13% abv.

As an artisanal winery we are oriented mainly toward crafting limited volumes of wines with expressive character and carrying the specifics of the terroir and North-Western Bulgaria is a region that offers good opportunities for growing grapes and wines with distinctive characters. With “Sensum” Borovitza winery became pioneer of truly terroir wines in Bulgaria. Its phenomenal character is being identified with selected vineyards in the hilly part of the Bulgarian North-West. It is a Cabernet Sauvignon and Merlot blend with impressive harmony between the fruit and the specific minerality of this terroir, which makes it a perfect match for a great variety of dishes. The winery is also well known among the connoisseurs with its Le Cubiste wines – Cabernet Sauvignon and Chardonnay. Both are gorgeous, complex, showing finesse and mineral hints.

The Borovitza series are Chardonnay, Sauvignon blanc, Rikat, Gamza, Merlot, Cabernet Sauvignon and Pinot Noir varietals. Grapes were grown in selected vineyards in the region and the wines carry their so specific elevation and minerality.  In 2008 after 5 years of barrel aging the winery offered the flagship wine DUX, another fine wine, already considered as a peculiar height in the terroir expression, thus further focusing on the original and neglected sites in this part of the country. In addition limited series of original sparkling wine Ognyan Tzvetanov Premiere Cuvée are released. It is a chardonnay/sauvignon blanc blend, showing clean aromas, richness and finesse. I believe that crafting such distinctive wines is more a philosophy and a way of life than a business.

Chateau de Val

  • Grand Claret 2009, Cabernet Sauvignon & Merlot, Danube Plain, 14.5% abv.

Val Markov is a Bulgarian, who escaping the repressive regime in Bulgaria 35 years ago, crossed former Yugoslavia by foot, arriving in Italy and subsequently arriving in the United States.  After the democratic changes, he came back to his native village and planted a vineyard and built a winery. With the wine Grand Claret he brings back memories of his childhood, when, on celebratory occasions like weddings, the guests mix their wines and after that enjoy this blend.  There is no recipe for this wine. We use 14 varieties, as much as local as international. We can notice the influence  on its aromatic and tasting profile of local "star" varietals such as Gamza and Saperavi. In this way we preserve the regional flavours and and our cultural heritage.

Drinking wine is a tradition and a ritual. To drink a Merlot from the Kolarovo region means to touch the magic of the elixir, to expirience the thrill of the unknown. The wine cellar Chateau Kolarovo is located on the south-west slopes of the mountain Sakar, near the town Harmanli, and bears the name of the village, where it is located.

The winery has its own vineyards, which are part of the vineyard massif of Kolarovo; one of the largest massifs in Bulgaria. The region is characterised by very favourable sunny days, Mediterranean breeze, providing cooler nights, together with a proper composition of the soil. These prerequisites create the perfect conditions for the cultivation of quality grapes, which is transformed with love into a “fairy-tale”. Our efforts are directed to the production of high quality boutique wines of different varietials, leaving the accent on the magnificent Merlot, for which the region is renowned. And it was Merlot, vintage 2009, which won a gold medal and a special prize at the prestigious competition Citadelles du Vin 2010, France. Our team’s concept is to express to our best the striving we have for individuality and perfection, so that everybody who experiences our wine is able to understand and appreciate it, and most of all, to relish it.

The wines produced by the young team of our winery are mostly  blend , derived from the grapes of well selected rows of specific vine massifs, carefully controlled throughout the year.

The total quantity of wine produced for a given year is 60,000 bottles. The batches of the different wine brands of Dragomir are limited in quantity the whole quantity of a given brand is bottled together and some of them are only for connoisseurs. We are a young and dynamic team striving for perfection. Our passion and commitment is to created wines of the highest possible quality with a great respect for nature. We are wine lovers ourselves and nothing gives us greater pleasure than please and challenge the palates,  senses and intellects of our friends and customers. Wine is a form of art where the spiritual and material combined is reflected in each bottle. Our long-lasting vision is to establish the ultimate Bulgarian wines in one of the finest wine regions in the world, capable of producing Grand Cru quality wines.

We strongly believe in organic and biodynamic farming, without being dogmatic. Our project is a challenge and a dream at the same time. The challenge is to be able to produce wines of the highest quality in a specific area of Bulgaria: South Sakar, which, we believe, has great potential and a unique terroir. Our dream is to see a Bulgarian wine on a par with wines from the best sites in the world. Ivo is not only a concert pianist, but he is also involved in the promotion of Bulgarian culture and arts abroad. His idea to name each wine after a musical composition, or a musical character was a natural choice. And it was also understandable changing the name with each vintage. Nature like art does not repeat itself.

Maxxima Cellars

  • Private Reserve 2008, Cabernet Sauvignon & Merlot, Danube Plain, 13% abv.

Having offered the first ever Bulgarian ICON wines to the connoisseurs under the Maxxima label winemaker Adriana Srebrinova keeps the same spirit and enthusiasm in chasing her main ambition – achieving the best expression of the best varieties grown in the best sites. Extremely limited volumes of the grapes crushed result in tiny amounts of table and sparkling wines produced, but of highly expressive character, reflecting the peculiarities of the respective terroir. Limited quantities of Pinot Noir, Chardonnay, Sauvignon Blanc and other varieties from selected growers in North-West Bulgaria are also crushed.

The focus now is on planting vineyards on exciting terrains and there are already 7 ha planted, part of which are nestled bellow the famous Belogradchik rocks over red sandy-rocky soil. It is one of those special places with an abundance of rocks, mountain scenery, wildflowers and herbs. And a bit of history. The premier vintage was in 2010, mostly marsanne, roussanne, viogner, gammay and pinot noir. The philosophy behind this approach is that wine is dictated by the place it was grown. While applying traditional viticultural methods it is believed that the terroir combined with the owner's obsession with brilliant wines would result in wines with a sense of place, balance and finesse. Two sparkling wines were released recently, white and rosé, under the Adriana Srebrinova label – vintage 2004 and non vintage. Both are distinguished by their incredible complexity and elegance.

Santa Sarah is on wheels….Santa Sarah is a team of four young wine enthusiasts, with an average age of 30, owning three caravans and of course many expensive “toys” for their garage winemaking. The team first located in Nova Zagora (2000-2004) and Stara Zagora (2004-2011) were always extremely comfortable and convenient to store all the barrels, equipment and technology necessary to produce a fine wine we were dreaming about. The team monitor closely the vine growing process and all the work in the vineyards of their grape suppliers. This allows them to have consistently good control on the quality of the grapes an also to experiment in the vineyards. Santa Sarah works with some of the most dedicated grape-growers in Bulgaria: Ana Tashkova, Gancho Dalakov, Eva Ancheva, Emo Zaichev, Zlatko Genovski, Ivan Ivanov, Nikola and Atanas Shtipkov. The young winemakers follow carefully all the work done in those vineyards.

After picking the grapes twenty hard working Bulgarian women sort all the berries, according to their qualities. Santa Sarah accents on the soft treating of the must and the wine. They use gravitation, which is slightly more expensive and harder to practice, but it is the most effective and generally giving the best results in terms of quality. The fermentation lasts from two to six weeks in small oak and stainless steel fermenters from 10 to 50 hl. Santa Sarah winery owns 40 hectares of land in Goritca village, near Pomorie and Nessebar (on the southern part of the Black Sea Coast) where the new vineyard and (small and beautiful) wine cellar will be located. Santa Sarah’s production is sold for 80% in Germany, Sweden, Switzerland, Finland, Austria and England, Belgium and Holland. A percentage of the 250 000 bottles of wine produced each year are the well-established wines in Germany – Zar Simeon and Zar Simeon BIN 40. Zar Simeon and Zar Simeon BIN 40 was awarded the Gold Medal at the Mundusvini Competition in 2004 and 2006.

Telish/Castra Rubra is a leading producer of wine, which owns two wineries in Northеrn (Telish) and Southern Bulgaria (Castra Rubra). Villa Yustina

  • Sauvignon Blanc Prima '10, 13.8% abv.
  • Pinot Noir Prima '10, 13.9% abv.
  • Mavrud & Rubin Monogram '08, 13.5% abv.

Domaine Yustina Ltd. was established at the end of 2006 with the idea of building a small winery and to develop a wine tourism. These were the foundations, laid by a man, to whom wine means love and spiritual culture. We chose the village of Ustina, in the Plovdiv region. We have designed the cellar with a capacity of processing 300 tons of own grapes, with an underground cellar for wine ageing, which can hold 600 barrels, and, of course, a contemporary tasting hall. The primary idea of the wine-cellar, apart from producing good wine and teaching people to enjoy it, is being a testing cellar of “Tomika metal” company.  It manufactures equipment and containers for the wine industry and here they are tested in production conditions.

The concept which we seek to develop is to produce only high-quality wines, to offer them to connoisseurs, corporate customers, independent retailers, and online wineshops. After building the new premises of the cellar, we will gradually proceed with the construction of the other parts of the project which will complete our idea of wine-tourism/recreation – a shop where the tourists will be able to buy wines and works of art, crafts and other products typical for the customs and traditions of the area. There will also be a wine bar, a restaurant, a shooting lodge with a possibility for staying overnight. The long-term program includes a four-star hotel and an open swimming pool.
